Low Cal Hamburger Minestrone Recipe

Ingredients

  • 1 pound ground beef 93%
  • 1 medium onion chopped
  • 1 tablespoon minced garlic- more if you like
  • 1 cup of thin chopped celery
  • 2 cups of water
  • 1 zucchini chopped
  • 1 summer squash chopped
  • 2 cups of cole slaw mix (if not just use shredded cabbage)
  • 1/2 cup of uncooked elbow macaroni or broken pasta
  • 2 boulion cubes or granule packets about 2 teaspoons
  • 1 teaspoon of Italian Seasoning
  • 1 can (28 ounces) whole tomatoes undrained
  • 1 cup of kidney beans
  • salt and pepper to your taste.

Instructions

  1. Cook ground beef, onion and garlic in pot until beef is brown,
  2. stir in the remaining ingredients, breaking up tomatoes.
  3. heat to a boiling
  4. cover and simmer for about 1/2 hour, until macaroni is tender. I like it cooked longer to mesh the flavors together more.
  5. Serve with grated cheese if desired.
