Buckwheat Chicken Lasagna Recipe
Ingredients
- 3 handfuls diced chicken breast
- 3-4 heads of roasted garlic
- 1 roasted onion
- some chopped celery to you liking
- 1 1/4 cup canned spaghetti sauce
- dried basil to taste
- pepper to taste
- 1 cup buckwheat groats
- 2 cups boiling water
- 1 cup lowfat cottage cheese
- 1 egg
- basil to taste
- mozzarella cheese
- parmesan cheese
Instructions
- Put 1st 7 ingredients in saucepan and simmer for 20 minutes or more.
- Put groats in sauce pan and pour in boiling water. Simmer for 15-20 minutes. Take off heat and let set until water is absorbed.
- Mix next 3 ingredients.
- In an 8x8 casserole dish, put in half of the chicken mixture.
- Put all cottage cheese mixture next.
- Put 1/2 groats next.
- Top w/ some mozz cheese (I used a handful)
- Next use the rest of chicken mixture
- Top w/ the rest of the buckwheat groats and
- top w/ some parm cheese.
- Cook at 350F for 30 minutes
