Sunday Slow Cooker: Carnitas
Ingredients
- 2 1/2 pound Lean pork tenderloin or pork shoulder, lean only fat removed
- 1 each onion diced
- 4 cloves garlic minced
- 3/4 tsp salt
- 1/2 tsp pepper
- 1 tsp oregano
- 1 tsp cumin
- 2 tbs Chipotles, canned in adobo sauce
- 3/4 cup light beer or light chicken broth
- 8 low cal Flour tortillas
Instructions
- Season the pork with salt and pepper.
- Place it in the crockpot.
- Mix together the remaining ingredients in a bowl and pour over the pork.
- Cook for 6-8 hours on low until the pork is fork tender and easily shreds.
- Preheat the oven to 500 degrees. Lay pork out in a single layer on a non-stick baking sheet. Roast for 4-5 minutes until the edges become crispy and toasted.
