Sunday Slow Cooker: Carnitas

Ingredients

  • 2 1/2 pound Lean pork tenderloin or pork shoulder, lean only fat removed
  • 1 each onion diced
  • 4 cloves garlic minced
  • 3/4 tsp salt
  • 1/2 tsp pepper
  • 1 tsp oregano
  • 1 tsp cumin
  • 2 tbs Chipotles, canned in adobo sauce
  • 3/4 cup light beer or light chicken broth
  • 8 low cal Flour tortillas

Instructions

  1. Season the pork with salt and pepper.
  2. Place it in the crockpot.
  3. Mix together the remaining ingredients in a bowl and pour over the pork.
  4. Cook for 6-8 hours on low until the pork is fork tender and easily shreds.
  5. Preheat the oven to 500 degrees. Lay pork out in a single layer on a non-stick baking sheet. Roast for 4-5 minutes until the edges become crispy and toasted.
